Merluza al ajillo (de "¡Cocina, hombre soltero!")

La cocina de la improvisación es, como tantas cosas, al tiempo arte y riesgo. Arte porque cuando te sale bien triunfas. Riesgo porque más de una vez te toca comerte un filete más duro que una losa, unas verduras picantes de nivel radiactivo o, en casos extremos, un bocata de paté.

Hoy mi congelador me ha dicho que ya iba siendo hora de gastar unos filetillos de merluza que compré vaya usted a saber cuando, que si no, me los iba a descongelar e iba a dejar que procreasen. Al principio me he asustado: ¡Tengo la nevera vacía, voy a tener que empanarlos!. Mi alma libre se niega en rotundo a empanar nada que no sea absolutamente necesario empanar (pese a que a mí hay cosas que me gustan empanadas).

Así que se ha producido la subsiguiente disputa entre las fuerzas del bien (o "Con la comida no se juega") y las del mal (o "¿Eh, por qué no pruebas a echarle yogur a esa merlucita?") que acabó, como es costumbre, en un justo término medio.

Puse una sartén (que tengo desmangada por las tropicales cualidades culinarias de alguien) con un poquito de aceite para ir dorando los ajos, cortados en laminitas. No es conveniente dejar que se quemen demasiado, más que porque vayan a saber mal (si comes merluza al ajillo cómo te huela el aliento después es algo que debe preocuparte) porque se te quedan pegados entre las muelas. Un asco, de verdad. En ese aceite he espolvoreado un poquito de laurel en polvo. Luego he dejado caer, como el que no quiere la cosa, los filetes de merluza, rompiéndolos. Me daba lo mismo porque esta es una receta para merluza desmenuzada, como aquél que dijo. No tenía guindilla, pero cuando queráis podéis añadirla, si os gusta el toquecillo picante, yo le he echado un pelín de pimienta, pero tampoco nada del otro mundo.

Conforme se freía la merluza, yo iba removiendo y deshaciendo los filetes. Es bueno ir aireando los pedacitos con la espumadera y, si os atrevéis, echadle huevos y haced un revuelto. Yo hoy no lo he hecho porque ya era demasiado tarde, pero seguro que algún día lo pruebo. En fin. Al acabarse el aceite, una gotita de agua (no mucha, el pescado hervido me da asco). Esto era más o menos para darle vapor, y la cosa es que ha resultado bien.

El toque final, una vez me lo he puesto en el plato, ha sido echarle mantequilla por encima, que se ha ido derritiendo.

Jugoso, sabroso, suave si se quiere, sano (menos en excesiva cantidad), fácil y barato. ¿Qué más queréis?
